(Zombie) Meatloaf

1/4 cup butter

3/4 cup diced yellow onion

1/4 cup diced celery

4 ounces button mushrooms, finely chopped

1 Tbsp kosher salt, divided

3 cloves garlic, minced

1 tsp black pepper

1/4 tsp dried thyme

1/8 tsp cayenne

1.5 lbs ground beef

1/2 cup bread crumbs

1 egg, beaten

1 1/2 Tbsp milk

1 Tbsp ketchup

1/2 Tbsp Worcestershire sauce

Preheat oven to 325 F.

Melt butter in a pan over medium heat. Saute diced onion, celery, mushrooms, and 1/3 tsp salt. Stir in garlic, black pepper, thyme, and cayenne. Remove from heat and let cool.

Combine remaining 2/3 tsp salt, ground beef, bread crumbs, egg, milk, ketchup, and Worcestershire sauce. Add cooled vegetable mixture. Mix until thoroughly combined.

Transfer meatloaf mixture to a prepared pan, baking sheet, or muffin tin. Bake until meatloaf reaches an internal temperature of 155 F (about 20 minutes for muffin tins, 1 hour on pan or in loaf pan).

Optional: Top with bacon or sauce. Place under broiler for a few minutes at the end of cooking.
