Dough:
1 cup (7 oz) levain or poolish
3.5 cups (16 oz) bread flour**
1 tsp (0.25 oz) salt
1.5 tsp (0.17 oz) instant yeast
1 tsp (0.11 oz) cinnamon
1/4 tsp (0.03 oz) ground nutmeg
1/4 tsp (0.03 oz) ground allspice
1/4 tsp (0.03 oz) ground cloves
1 tsp (0.16 oz) minced orange or lemon zest or extract
1 tsp (0.16 oz) almond extract
2 (3.3 oz) eggs
1/4 cup (2.67 oz) honey
1/4 cup (2 oz) olive oil
3/4 cup (6 oz) milk
Optional Glaze:
2 Tbsp water
2 Tbsp sugar
2 Tbsp honey
1 tsp lemon or orange extract
1 tsp sesame seeds
Remove levain from fridge an hour before making dough
Stir together flour, salt, yeast, cinnamon, nutmeg, allspice and cloves. Add levain, extracts, eggs, honey, oil and milk. Mix until a dough ball forms.
Knead to form a soft, but not sticky, ball. It should be tacky and very supple, approximately 10min. Should pass the windowpane test.
Proof for 90 minutes, or until doubled
Shape dough into boule, place on sheet pan with oiled parchment paper.
Proof 60-90 minutes, until nearly doubled.
Preheat oven to 350. Bake for 40-45 minutes, rotating half way. 190F internal.
Make the glaze by mixing ingredients (minus sesame seeds) on stovetop over low heat. Brush loaf as soon as it comes out of the oven, sprinkle on sesame seeds

* I doubled to make 2 9x5, but it made a bit more than that, try 1.5x for 2x 9x5 next time?
