Balsamic Soy Roasted Garlic Mushrooms

2 pounds mushrooms

1 tablespoon oil

3 tablespoons balsamic vinegar

2 tablespoons soy sauce

3 cloves garlic, chopped

1/2 teaspoon thyme, chopped

salt and pepper to taste

Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt and pepper.

Arrange in a single layer on a baking pan.

Roast in a preheated 400F oven until the mushrooms are tender, about 20 minutes, mixing half way through.
Recommended by Jeff's friend. Dad didn’t like - too much balsamic, not enough soy. Maybe would have been better as a balsamic reduction.

2 cloves garlic
4 Tbsp balsamic
2 Tbsp soy
1 tsp honey
1/2 tsp thyme
2 Tbsp butter

Simmer sauce in pot a few minutes. Toss mushrooms and roast 20 min. Season with salt, pepper, parsley.
