Basic DOUBLE CRUST Pie Dough

2 1/2 cups flour

1 1/4 tsp salt*

3/4 cup vegetable shortening

3 Tbsp cold unsalted butter

6-7 Tbsp ice water, as needed

Mix flour and salt. Decrease salt amount by half if using salted butter.

Cut in fat, one half at a time.

Sprinkle with water and blend until the dough just holds together.

Divide dough in half, shape into a disk, wrap, and chill before use.
