Cranberry Sauce

2 cups sugar

2 cups water

4 cups (1 lb) cranberries

(2 tsp grated orange zest)

(orange juice)

Orange juice can be subbed for a fraction of the water, but add it at the end.

Combine sugar and water, bring to a boil, and stir until dissolved. Boil the syrup 5 minutes.

Add cranberries and simmer very gently, uncovered, without stirring, until the berries are translucent. Skim off any foam.

If desired, add orange zest and juice.
