Really good rub with good amount of brown sugar
Cut pork into 6-7 pieces, 1 1/2 - 2 inches thick.
Apply a thick layer of rub and refrigerate overnight.
Smoke at 225 F for 3-5 hours until meat reaches 195-200 F.
