Daves Vegan Gravy

3 Tbsp whole wheat flour

1 cup vegetable broth

1 tsp onion powder

1 clove garlic, minced

1/2 tsp Dijon mustard

2 Tbsp soy sauce

ground black pepper

(1 Tbsp nutritional yeast)

(2 mushrooms)

Put flour in a dry cast iron skillet and toast it stirring constantly until it is medium brown but not burnt.

Add in vegetable broth, onion powder, garlic, Dijon mustard, soy sauce, ground pepper. If you have nutritional yeast, use 1 tablespoon. Or sometimes I added 2 mushrooms blended with a little water in a blender and then cooked that in the gravy.

Reduce the gravy a little and adjust with a 1 teaspoon flour dissolved in water if it needs to be thicker or thin with broth if it needs to be thinner. Add a little olive oil or avocado oil to add some body and richness.
