Overnight French Toast Casserole

French Toast:

1 loaf bread, cut into bite-sized cubes (crusty, sourdough, white, challah, all okay)

8 eggs

2 cups milk

1/2 cup butter, melted and cooled

1 Tbsp vanilla extract

3/4 cup sugar

Topping:

1/2 cup flour

1/2 cup brown sugar

1 tsp cinnamon

1/4 tsp salt (omit if using salted butter)

1/2 cup cold unsalted butter, cut into pieces

Grease a 9x13 baking dish. Add bread cubes to dish.

Whisk together eggs, milk, butter, vanilla and sugar. Pour evenly over bread.

Mix dry topping ingredients. Cut in butter.

Refrigerate casserole and topping separately overnight.

Preheat oven to 350F. Sprinkle topping evenly over bread.

Bake 35-60 minutes, depending on how soft you like it. Cover with foil if it is getting too brown.
