Pumpkin Pie

1 can (15 oz) pumpkin
1 1/2 cups (1 can, 12 fl oz) evaporated milk*
3/4 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/2 ground ginger
1/4 tsp ground cloves
2 large eggs
*Or alternative milk product. Use coconut cream for a rich pie, almond milk for a very light pie, or a combination.
Preheat oven to 425F.
Beat eggs. Stir in pumpkin and dry ingredients. Gradually stir in milk.
Pour into pie shell. Bake 30-40 minutes until knife comes out clean.
Cool on wire rack for 2 hours.
