Sauteed Squash and Onion

1 Tbsp canola oil
1 Tbsp sesame oil
1 medium onion, cut into 1-inch dice
2 garlic cloves, minced
salt
2 lbs gray squash or green zucchini, cut into 1/4-inch-thick rounds
freshly ground black pepper
1 tsp soy sauce
Set a 12 inch saute pan over medium heat and add canola oil and sesame oil. Once the oil shimmers, add onion and garlic to the pan, with a small pinch of salt. Cook 3 minutes, stirring often so they don't color.
Add squash and salt and pepper. Cook 3 more minutes, stirring constantly.
Add soy sauce and cook until the squash is tender.
Transfer to a bowl and let cool completely. Cover and refrigerate at least 2 hours.
