Spinach Egg and Cheese Bites

8 eggs

1 cup cottage cheese

1 1/2 cups shredded cheese (cheddar, gruyere, provolone, etc.), divided

2 Tbsp corn starch

1/4 - 1/2 tsp salt

1/8 tsp black pepper

1 oz or 2/3 cup spinach, finely chopped

2 scallions, green parts only, finely chopped

Preheat oven to 300. Place pan on bottom rack and fill halfway with boiling water to provide steam. (Or use steam oven here.)

Grease muffin tin.

In a blender, combine eggs, cottage cheese, 3/4 cup shredded cheese, cornstarch, salt and pepper. Blend until smooth, 30 seconds.

Pour into muffin tin, filling each 2/3-3/4 full. Sprinkle spinach and scallions on top. Press greens into batter so they aren't floating. Sprinkle remaining cheese on top.

Bake 20-25 minutes.

Let rest in pan 5 minutes before removing and serving.

Couldn’t find vegan cottage cheese. Subbing Greek style plain yogurt worked okay.
