Spinach with Sesame

2 bunches (1 lb) spinach

1 Tbsp soy sauce

1 tsp sugar

2 Tbsp sesame oil

5 garlic cloves, minced

1 tsp toasted sesame seeds

Fill a large stock pot three-quarters full with water and bring to a rolling boil. Prepare an ice bath.

Remove stems from spinach and wash thoroughly.

Immerse half the spinach in the water. Blanch for 30 seconds, then immediately transfer to ice bath. Repeat.

Once spinach is cold, drain and squeeze out excess water. Gently separate the leaves.

Add the soy sauce, sugar, sesame oil, garlic, and seeds and mix well. Transfer to a lidded container and refrigerate for at least 2 hours.

Keeps 2-3 days. It should give off a nutty sesame oil aroma. If it does not, discard.

Watercress can sub for the spinach.
