Vegan Lasagna

1 container firm tofu
1/4 cup milk
1/2 tsp garlic powder
2 Tbsp lemon juice
3 Tbsp chopped fresh basil or 2 Tbsp pesto
1 tsp salt
1 package frozen spinach
24 oz. jar spaghetti sauce
1/2 box lasagna noodles (about 10 noodles)
Blend tofu, milk, garlic powder, lemon juice, basil and salt. Process until smooth. Add spinach.
Place 1 cup of sauce in bottom of crockpot. Layer 1/3 of noodles, then 1/3 of tofu/spinach mixture. Repeat, ending with sauce on top.
Cook on low 6-8 hours until noodles are soft.
